Mother's Day Kit Kat Cakes

This year I decided to do something a little different for the moms in my life. There was going to be 6 of us so I wanted to make a mini cake for each one of them, instead of one big cake.

I decided to make these really cute Kit Kat cakes everybody LOVED them and I've already got more orders for the future. They're easy to make and you can really get the kids involved in this one. All you need is a really big box of Kit Kats which I ended up getting at Costco.

The centre of the cake is white cupcake covered in buttercream icing. Then I took two Kit Kat bars for each cake and cut the bars in half, placing each one around the cakes, pressing it into the cake lightly enough to stick. Make sure you make these in a cooled room or where there is air conditioning, otherwise your chocolate bars will start to melt.

Finish off with a little chocolate ganache on top and decorating however you want!

Beautiful Cupcake Wrappers

Another quick and easy way to make mom something beautiful is to bake mother's day cupcakes in those beautiful cupcake wrappers. They can make a plain looking cupcake simply stunning, especially the ones that have jewels or sparkles on them. Choose a color palate that goes well with what else you have, like napkins, candles, et cetera and tie it all in together.

All you need to is bake your cupcakes in regular baking cups and then place them into the special liners before serving. ~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~

Strawberry Shortcake Just For Mom...

If you're looking for something a little on the lighter side for mom than why not try making a strawberry shortcake. It's truly a delicious Mother's day recipe and it's also something the kids or even dad can make too!

Ingredients: 4-5 c. fresh, ripe strawberries 1/2 c. granulated sugar 1 pkg. (8 oz.) cream cheese, softened 1 c. powdered sugar 1 pkg. (8 oz.) Cool Whip 1 angel food cake (about 14 oz.), cubed

Instructions: Wash strawberries and remove green stems and tops. Slice each strawberry in half.

In a medium bowl, combine strawberries and sugar. Cover and let sit in the refrigerator until needed.

Combine cream cheese and powdered sugar in a large mixing bowl. Beat until smooth and well combined.

Fold in Cool Whip. Gently stir in angel food cake. Cover and refrigerate two hours or more.

Either top whole cake with strawberries before serving, or top each cut serving of cake with strawberries.

Chocolate Dipped Strawberries

Another all-time-favorite has to be chocolate covered strawberries. It doesn't have to be Valentine's Day to serve up a wonderful plate of these, plus they're a great way to make any mom feel special.

Ingredients: 4 c. fresh, ripe strawberries (at room temperature) 1 1/2 c. semi-sweet or dark chocolate chips 2 tbsp. light corn syrup 6 tbsp. butter

Decorations (optional): chopped nuts (pecans, walnuts, hazelnuts, almonds, or macadamia) colored or chocolate sprinkles colored and/or flavored sugars melted white chocolate

Instructions: Wash and dry strawberries. Leave stems and tops intact.

Combine chocolate, corn syrup, and butter in a microwavable bowl (or double boiler). Microwave at 20 second intervals, stirring often, til melted. Do not burn. Or melt in a double boiler over boiling water until melted, stirring often.

Dip each strawberry into the melted chocolate mix. Leave a 1/4-to-1/2" strip of bare fruit between chocolate and stem.

If desired, roll coated strawberries in nuts, sprinkles, or sugars. Be sure to do this while chocolate is still melted.

Place plain chocolate or decorated strawberries on waxed paper.

If desired, decorate plain chocolate strawberries with melted white chocolate using a toothpick or cake decorating supplies. Very pretty!

Refrigerate about 20 minutes to set.
