They're the perfect bite-size treat full of the same flavour and greatness of their big brother. So if you're having a cupcake craving then you can easily satisfy your sweet tooth with this mini littler version.
I served then at my last dinner party instead of regular sized cupcakes because I thought these were a much more appropriate size for people to snack on after a big meal - and they were a real hit! I think all that was left was a few crumbs.
Almost all cupcake recipes can be turned into mini cupcakes, as long as you have a mini muffin pan to work with. If your regular cupcake recipe makes 12 full sized cupcakes you'll probably get about 32-26 minies.
I wanted to kick off the summer this year with a big backyard party, so I decided I wanted the theme to be everything BBQ! My husband was on grill duty and I was on... well... to decorating and make everything look cute duty!
My first thought was of course dessert. Do I serve cake, ice cream or cake, what would everbody like? So I decided to make mini hamburger cupcakes instead of the full sized hamburger cupcakes this year, and I'm glad I did. They were such a success that I'm thinking of turning all of my regular fun cupcakes in these cute little minis.
To make these I started off with my Mini Cupcake Maker
to make the top bun and bottom bun. After making your mini cupcakes let them cool completely and cut in half. Take the top half of the cupcake and brush with a thin glaze. While it's still wet sprinkle on a few seeds to make it look like the top of a hamburger bun.
For the actual "burger" part I use half of an oreo cookie because it fit perfectly. You could also use a chocolate cupcake cut in half as well. Next, for the lettuce and Ketchup I just used colored buttercream icing. For the cheese I ended up using orange gum strips because I was lacking enough time to make my homemade fondant but this turned out really good too. I put them out on a nice, colorful plate that I found at the nearby store and it was done!
My next project that I wanted to do was mini donut cupcakes , just like you get at the fair but in cupcake form - how cool! I actually got the idea from my girlfriend who had brought home a bag of mini donuts and I thought well hey, I can turn these into cupcakes.
These are reall easy to make and trust me when I say double the batch because these will gone very fast!
Mini Donut Recipe INGREDIENTS
1 cup sugar
1‑1/2 teaspoons ground cinnamon
1 package (18-1/4 ounces) yellow or white cake mix, plus ingredients to prepare mix
1 tablespoon ground nutmeg
1.Preheat oven to 350°F. Grease and flour 24 mini (1-3/4-inch) muffin pan cups. Combine sugar and cinnamon in small bowl; set aside. 2.Prepare cake mix according to package directions; stir nutmeg into batter. Fill prepared muffin cups two-thirds full. 3.Bake about 12 minutes or until lightly browned and toothpick inserted into centers comes out clean. 4.Remove cupcakes from pans; roll in sugar mixture until completely coated. Serve warm or at room temperature.
The last baby shower I went to I brought mini cupcakes, just because it fit the theme of tiny and cute and I thought sometime not everybody wants to eat a full cupcake, especially if there is so much other food being served.
I purchased a really cute baby feet cupcake stand by wilton
and I think this really added a nice touch to it, rather than just placing the cupcakes on a dish.

I think when you're serving cupcakes or mini cupcakes they look so much better when served on a cake stand. They can be creative stands with lace and jewels or they can even by recyclable stands. There's a lot of options out there with it comes to purchasing or making your cupcake stand
