These sandwich cupcakes are the best of both worlds! A delicious cupcake on the top and bottom with creamy frosting in the center. You can call them backwards cupcakes!

. After you've baked them and they've complete cooled, cut each one in half.
The next step is to choose the type of frosting you would like to use. If you don't have a piping bag then you can also use a zip lock bag and just snip off a small portion of one of the corners. Pipe your frosting onto the part of the cupcake that will be the bottom of your "sandwich".
Next, place the top portion of you cupcake onto the frosted cupcake bottom, just like you would with a regular sandwich. For a little "extra" I place a sandwich toothpick through the center of my sandwich cupcakes.
Have fun with your sandwich cupcakes by adding some unique flavors, colors, and decorations.
Think of a theme, or perhaps a holiday that you're preparing these for. For example, for St. Patrick's Day you could color your cupcake batter green and your frosting yellow or gold.
Use colorful sprinkles to roll the edges of your cupcake sandwiches in so that it sticks to the edge of the icing.
