The top of the cake always seems to get the most attention, so why not spread some of the love to the inside too!
Cupcake fillings are as important as the icing on top. It may not be as common but it's becoming more and more popular quite fast! It's almost impossible to walk into any cupcake shop and not be able to find a menu with cupcake fillings.
There are several ways you can fill a cupcake with jam, jellies, cream, icing or many other types of filling.
Some people take a cupcake shortcut by just slicing the cupcake in half and smearing the filling between the two layers, but this just doesn't give you the classic look of a filled cupcake, and to me is cheating!
One of the quickest, and easiest ways of filling your cupcake is to cut a small hole at the top of the cupcake and fill from there.
Take a sharp pearing knife and into a cooled cupcake at an angle, halfway between the bottom of the cupcake and top and cut a circular cone out of the cupcake.
Once you have the cone removed from your cupcake cut off the pointy end just leaving the circular base, which will be the top of the cupcake at the end. Now add your filling using either a pastry bag or zip lock bag and fill almost to the top of the cupcake.
Once the filling is in place then take your piece of cut out cupcake and place back on top covering the filling inside. You're done!
