Beaver Cupcakes
Think outside the cake box...

You don't have to be Canadian to love these cupcakes!

I love making fun and unique cupcakes, especially all the cute ones! When people walk by my store and need to by one of my cupcakse just because they're too cute to pass up, well, that's what puts a smile on my face!

These cute little beaver cupcakes are easy to make and decorate. For a dozen cupcakes you will need two boxes of Junior Mints, one bag of chocolate Maltesers and one package of vanilla (or chocolate) cookie waffers, and two packs of white gum.

Step One beaver cupakes: For the base of the cupcakes I took chocolate fudge icing and melted it in the microwave for two minutes. Then I diped each cupcake into the icing so I would have a nice smooth top. Before the icing hardends, take two Junior Mints and place them into the icing for each ear.

Step Two beaver cupcakes: The next step I did was the tail. You can use a whole vanilla waffer or you can cut it in half, depending on how long you want the tail to be. Dip one end into the icing that has been melted (you might have to stick it back in the microwave for a few seconds) and stick that end into the back of the cupcake so that it stays in place. Make sure it's in far enough that it won't fall out!

Step Three beaver cupcakes: The next step were the eyes. I used the chocolate Maltesers for this part. You can either use the chocolate icing or royal icing (which will dry hard) to attach them to the cupcake. I tinted a small amount of icing blue for the rest of the eyes. You could really get creative and do eyelashes out of licorice or you could even add eyebrows if you wanted. A pair of glasses would be cute too!

Step four beaver cupcakes: For the mouth I took some white icing and colored it a lighter brown that what the cupcake is. Using a pastry bag or a ziplock bag cut a small hole at the end. Sqeeze out a small horizontal strip across the cupcake underneath the eyes. Then I take the two pieces of white gum and place each piece into the icing, making sure I have enough to hold them into place. Then for the nose take the same icing bag and put a small dot in the middle, halfway covering the teeth. And that's it, you're done!
